Thanks to Jim Lassiter and Lexington Medical Center for hosting. Thanks to Scott and Joan Justice for the education on their Certified Grown and Pasture Raised Cattle and Sheep. Very informative.
Golf Tournament is up and running. This is our biggest event of the year to bring the culinary community together along with brokers. Networking is very important to us and this a good way to take advantage. Vinnie will send out an email on the tournament. Some things to remember:
· We need volunteers for both Sunday afternoon @ 3:00 P.M. and Monday morning @ 6:30 A.M. at Mid – Carolina Golf Club.

· T-shirts were discussed. Rancer Graphics owners Susan and Robb Hawfield were in attendance. Ed to get designs from Bruce and Jim to get patchwork from Charlie. From there, these will be send to Susan and Robb and they will design the shirts for $6.00 ea. This will be a great promotion for the ACF and volunteers will receive a free t-shirt. We will also sell them individually at the tournament.
Vinnie discussed giving a t-shirt with all new memberships.
Vinnie read a few emails about the Chef and Child our chapter helped with July 26th. Lessons were learned by the children and the John Lindower and those who volunteered did a great job. Our next Chef and Child event will be sometime in October.
On another note, John will be stepping down as the Chairman of the Chef and Child.
· Membership is down to 42 active members. We need to promote and elevate our chapter whenever we can. We need to step up our education pieces.

April’s addition of the Columbian Metropolitan Magazine will have the ACF – MC article in it.
Greg mentioned a Culinary Competition in Atlanta (didn’t catch the name of the show). It will be a “Wild Card” with protein and a dessert prepared in 1hr. 30 min.
Discussion about Palmetto Place Dinner. Still need some teams to provide food for stations. I will cannot attend. I will be out of town.
Ed gave an overview of the C.E.C. certification saying the last test was a success. 3 passed; 1 didn’t. There will be another one on May 15th at BCBS.
Jim presented a tomato update on prices and availability. Literally, there are none of any quality and they are very expensive.
Jim presented an update on Whitakers proposal. We are looking into the general process of procuring a grant through the Federal gov’t. Jim is talking with an assistant of Jim Clyburn’s office and will have an update as more information becomes available.

1. President’s Dinner was a great success. Everyone had a good time. Chef Richard did a wonderful job.
2. Meetings:
A. March’s meeting (3.1.10) will be held at Sysco. Educational on Combi-ovens: Rational and Blodgett.
B. April’s meeting is still open.
C. May’s meeting (5.3.10) will be held at USC with a knife demonstration from Pro Chef’s Brian Del Berto(?). Charlie brought up another reunion at May’s meeting. Thor would like to continue having the meetings at USC from now on. Good location and we wouldn’t have to worry about facilities for meetings.
3. May 21st at Embassy Suites – Palmetto Place Event:
A. Different International Cuisine Stations
B. Preparation – Appetizer portions for 150 People.
C. Chef Richard Snidar to provide appetizer and dessert bar.
4. Committee Reports:
A. Whitaker Williams, Chairman for the Long-Range Planning Committee respectfully submitted building plans to the Board for approval. These plans provide the chapter with kitchen for preparation and training with banquet facilities and a culinary arts museum.
B. The Board will discuss and possible approval.
5. Discussion on the SE Regional hosted by the ACF-MC in 2013.
In competition with the Hilton Head Chapter.
6. John Lindower spoke about Chef and Child at Saluda Shoals during their
summer Day care/summer camps. He’ll report later.

The practical exam at BCBS is not only for CEC certification but for all Certification.
Frank Workman spoke about the 10th Annual Grits Cook-Off Competition at the Salley House on November 7th.
Palmetto Place Emergency Children’s Center dinner was canceled due to lack of registration.
Lot of excitement about the Saluda Shoals Chairman’s Lighting on November 23rd. Lot of signatures for the event as well as students of Jim Miller’s classes.

· The ACFMC annual Golf Tournament will be held on September the 8, 2008 at Mid Carolina Country Club, We are in need of door prizes, goody bag items, and any donations that would like to be made. We will be in need of a couple of volunteers to assist in setting the tables in the morning for the vendors.
· Replacing the JDRF was discussed. Ads for the newsletter and added events should help off-set some of the revenue lost.
New Business:
· ACF National Convention will be held in Las Vegas July 14-17
• The ACFMC is in the process of finalizing a Sanctioned Competition with SYSCO of Columbia at their annual Holiday Show on October 8, 2008 at the Columbia Convention Center (more info to come)
· The Adluh Grit Competition will be moving back to downtown Columbia and we will be having more information on this event over the next couple of months

· The USC Dance Marathon was a huge success. Angela Floyd presented her appreciation the ACF-Midlands Chapter for their continued support. The Marathon raised over $110,000 for the children. Thanks to John Londower and Sheila Veach for heading up the ACF’s participation.
· On Wednesday March, 12th at Irmo Elemetary, the CCF event will be held. This event will educate the young folks on nutrition as well as having many exciting exhibits, e.g. Chef Compton doing gardemanger work. Volunteers are needed to help serve breakfast and lunch. Please contact Sheila Veach at cveach0824@aol.com. Should be an exciting time.
· In regards to helping replace the JDRF this year, Liquid Assets, who will sponsor the St. Patrick’s Day event in 5 Points on March15, has asked if our Chapter would like to pull taps for a beer truck. The ACF will receive a monetary contribution back for this. Contact Vinnie at 264.2175 for more information. Should be fun.
· Palmetto Place Dessert Competition is right around the corner on May 3rd. We are looking for more participation this year and we ask that, if you could, contact anyone you know who might be interested. Also, if you have a signature appetizer that you want to show case for you or your establishment at this event, please contact John Lindower at John.Lindower@bcbssc.com.
· Stan Minemier spoke briefly on the annual golf tournament. Everything is going to plan and he certainly could use help early the morning of to distribute coolers, markers for greens etc. If interested in helping, contact Stan.

· Congratulations to Vinnie Livotti, CCA for being named Chef of the Year for our chapter at the President’s Annual Awards Dinner. He was presented this award by our chapter president Ed Chinners, CEC. The Award’s Dinner was hosted By Chef Richard Snydar of the Embassy Suites and a good time was had by all.
· Congratulations to all the Chef’s who participated in the Southeastern Chef’s Competition in conjuction with the 32nd Annual Hotel, Motel and Supply Show of the Southeast in Myrtle Beach 1.29.08-1.31.08. The winners were: Greg Mueller – Gold Medal and Best Pork Recipe. Larry Carl – Silver Medal Robert Stegall-Smith – Silver Medal Brandon Velie – Silver Medal James Lassiter – Bronze Medal Paul Insley – Bronze Medal
· February 22 and 23, The annual USC Dance Marathon will be held in the Strom Thurmond Physical Education Building to raise money to support the Children’s Miracle Network. The money raised will, in part, help to build a new wing for the children. Volunteer’s are needed.

New Business:
· May 3rd, the Palmetto Place Dessert Competition will be held at the Embassy Suites. This event raises money to help shelter kids that are exposed to challenged households. Please contact Vinnie Livotti if interested in competing or helping out.
· On March 11th(12th?) Team Nutrition Day will be held at Irmo Elementary School. Volunteers are needed to provide a breakfast and lunch (?) along with sharing nutrition information to the young children. Cost is free and the enjoyment is priceless.
· No new members were announced. If you know of someone who is interested please ask them to get in touch with the chapter.
· Replacing the JDRF will be difficult but with some cost savings and events, the ACF – MC should be as good as ever.

At 6:10 Edna Cox, presented the educational seminar on “General Nutrition and Health of the Elderly” At 7:36 ACFMC President Ed Chinners, CEC called the meeting to order by thanking Rick Schmitt and Edna Cox for hosting the meeting and for the educational seminar.

October meeting of the ACFMC was held on Monday October 3rd at Lexington Medical Center
17 people attended the General Meeting.
19 people attended the Education Seminar.
7:50pm President, Ed Chinners CEC called meeting to order and welcomed members and guests. Thanked Harvest Foods and Smithfield for presenting the educational seminar and thanked Chef Jim Lassiter for hosting the meeting.
The Pledge of Allegiance was led by Ed Chinners.
ACFMC mission statement read by Whittaker Williams.
The Culinarians Code was read by Rob Harper.
Member and guest introductions at 7:55pm.
Treasurer’s report read by Ed Chinners.
Secretary’s report read by Randy Davis and announced his resignation effective 10/03/05
Educational seminar sponsored by Harvest Foods and Smithfield Hams, on the “History of the Country Ham”. Smithfield was represented by Chef Richard Camerota and Skip Cothran and discussed the history of how country ham is made and the many applications that it can be used for in preparing multiple meals.
Unfinished Business:
1) Moving forward with Gary McMillian on producing Web site for ACFMC
2) Discussed the possible postponement of Childhood Hunger Day, Shelia Veach will follow-up.
3) Results of the Golf Tournament Fund Raiser, tentative Net revenue $13,000.
4) ACFMC sent $650 to ACF National Katrina fund with National matching, with a total of $1,300 being donated.
New Business:

2) Vinnie Livoti was appointed as new Secretary.
3) Stan Minemier announced the date of November 5th for the Grit competition, 14 spots still remain.
4) How Sweet It Is fund raiser and competition has been postponed till February, Shelia Veach will follow-up.

AT 7:26 ACFMC President Ed Chinners, CEC called the meeting to order by thanking Chef Vinnie Livoti for the facility, Chef Robert Cannon from Southern Foodservice Management for preparing the food, and Katherine Gatttis MS, RD, LDN, CFSP for the educational seminar on “Basic Nutrition”.
Josh McQueen recited the ACFMC Mission Statement Chef Damian Wanek recited the Culinarian’s Code The members then introduced themselves.
We had no Treasurers Report due to the Absence of our treasurer, Ryan Whittaker
No Amendments were made to the previous month’s minutes and the reading of the minutes was waived. The updated mailing list was passed around for any new changes of addresses.
Correspondence: none Guest Speakers: none Unfinished Business: 1) Information about the web site was brought up; we currently have 2 designers we are talking to for layouts and price quotes.
2) Copies of the Member Survey (also available in the June newsletter) were passed around for members to complete so that the board can help move the chapter in the direction that the members would like to see it go.
3) Childhood Hunger day is tentatively scheduled for Tuesday October the 18th and Team Nutrition Day is gong to be rescheduled for fall.
4) Sheila Veach, CEC announced that she is narrowing the Judges down for our annual Hot Food Competition to be held in October or November.
5) The topic was brought up that you should have already received and returned your ballots for the national officers.

2) Tickets for the Chef & Child raffle were sold and then the announcement that the Executive Board has decided to purchase the rest of the tickets in the ACFMC name and that if the chapter wins we will bring The 2005 P.T. Cruiser back to Columbia and do a local raffle as a fund raiser for the Chapter.
3) The announcement and thanks to U.S. Foods for their generous donation of $100,000.00 to the ACFMC to be broken up evenly over next five years: along with Stan Minemier agreeing to chair the event for the next five years
4) Internal ballots for the Herman G. Rusch award were discussed to decide democratically who our chapter will vote for.
5) A sign up list was passed around while discussing receiving the newsletter electronically: At this time, this will be along with the hard copy not replacing it. If you are interested in receiving the newsletter via E-mail please contact Ed Chinners, CEC to add you to the address
6) Chef-Trac Nutrition Classes will be offered by the Pee-Dee chapter on August 20 and 21, 2005
7) Discussions of the ACFMC office were brought up as far as the need vs. rent, possibility of subletting or moving to a more cost effective storage
8) We still have an opening for the Jr. Vice President. The next Meeting will be August 15 at Sysco Foods hosted by Chef Todd Oliphant.

May 2005
The May meeting of the American Culinary Federation Midlands Chapter was held Monday, May 2nd, 2005 at the office of Associated Foodservice on Riverchase Rd. in Lexington, S.C.
We had 14 people in attendance for the educational seminar and 23 attended the General meeting.
At 6:15 PM our Vice President Jimmy Jackson CEC, CDM, CFPP introduced Gregg and Gary Senn of Senn Brothers produce for the educational seminar. They discussed, grading, transportation, storage, the growing seasons and took questions from the group. The general consensus was that we all felt that we need more of this type of seminar. We want to thank Gregg and Gary for their time and much appreciated information.
At 7:34 PM Chef Jackson called the General Meeting to order:
The Pledge of allegiance was led by Chef Jackson.
The ACFMC Mission statement was read by our Junior President Whitaker Williams.
The Culinarians Code was read by all in attendance.
The group they introduced themselves and Chef Jackson thanked Associated Foodservice and their representatives for hosting and sponsoring the meeting and again thanked Gregg and Gary Senn for conducting the Educational Seminar.
The Treasurers’ Report was presented by Chef Ryan Whitaker and accepted by the membership.
Chef Randy Davis noted that the minutes to the March Meeting were recorded in the Chapter News letter and would be accepted unless there were objections. None were raised and the minutes were accepted.
